Why the same recipe varies
Three causes dominate: imprecise measurement, different heat, and different ingredient condition. Beginners most often miss heat. A recipe's 'five minutes on medium' assumes a particular output, so different equipment gives different results. Judging by state rather than time improves consistency โ not 'five minutes' but 'until the edges turn translucent'.
Season at the end
Seasoning a soup at the start leaves it salty after reduction, because water evaporates while salt remains. Season late and in small increments. Over-salted is hard to reverse; under-salted can always be corrected. Perceived saltiness also differs hot and cold, so taste near serving temperature.
Searing: moisture and heat
Meat or vegetables releasing water instead of browning usually means surface moisture, an under-heated pan, or too much in at once. While moisture evaporates the temperature cannot rise, so the food steams rather than sears. Pat dry, preheat properly, and cook in batches.

Where measurement matters most
Stir-fries and soups tolerate adjustment; baking does not. The ratio of flour, sugar and leavening works chemically, so eyeballing leads to failure. Flour especially varies by more than 20% depending on how it is packed, which is why baking recipes specify weight.
Safety: when oil catches fire
An oil fire is the most dangerous kitchen situation. Water flashes to steam and throws burning oil outward, spreading the fire dramatically โ never use it. For a small fire, turn off the gas and cover the pan to cut off oxygen. If it is beyond that, leave immediately and call emergency services. Keeping a kitchen extinguisher is worthwhile preparation.
